K, so (ha! Get it?! Queso?)…so queso dip is one of my all time favorite things on this planet. I love it like I love the beach. I love it like I love a good massage. I love it like if someone asked which of my 3 boys was my favorite, I’d answer, “Queso.” If I was on death row queso would be a part of my last meal.
We eat queso a lot in this house. I make it for football games especially, but we also eat it often for Sunday dinner. Yes, nothing but the best for the Good Lord’s Day. And every time I am asked to bring something to a “thing,” I bring queso – cuz it’s quick, easy, and everyone eats it like they are on death row, too.
I continuously get asked for the recipe, so here it is for ya. Make it for dinner tomorrow, or for the Super Bowl, or for that thing you have to go to next Tuesday but aren’t sure what you’re bringing but you had to sign up cuz everyone else was. I promise people will love it.
Easy Queso Dip
*One block of Velveeta cheese (Our grocery store sells their own less expensive version, so I usually buy that one.)
*One can of Rotel tomatoes, drained (Our store also makes a generic version. You can buy it in different levels of HOT, too, if you like spicy food.)
*One can of Chili (any brand, any version you like – with or without beans, spicy, not spicy. Leftover homemade chili is AWESOME in this, too!)
*optional: sometimes I add seasoned ground beef or sausage if I have it on hand – YUM!
This can be cooked on the stove, in the microwave, or in a crockpot. Chop Velveeta into cubes and add to a large saucepan, microwave safe bowl, or crockpot. Add tomatoes and chili. Heat until the cheese is melted. If queso is too thick, add a little bit of milk and stir.
I recently served queso at our Super Bowl Pre Game Party, and it was gone. Like looong gone. No leftovers, that’s for sure.
